Simple syrup – this adds the right amount of sweetness to the cocktail. The lime juice is tart so you need the simple syrup to balance the flavors. For a less sweet drink, you can use less simple syrup.

Soda water - you can also use sparkling water in this recipe. To Garnish

Fresh lime – slices or wedges.

Mint sprigs – adds a bit of freshness and flair to this cocktail.
- Combine equal amounts of water and granulated sugar in a saucepan and stir to combine. I frequently do 1 cup of each or 2 cups of each if I want to have some on hand for future drinks.
- Bring to a simmer and stir for just a few minutes until the sugar has dissolved.
- Remove pan from heat and let cool.
- Store in an airtight container for up to 3 weeks.

Cut half a fresh lime into quarters and place in a cocktail shaker.

Add the 12.5ml freshly squeezed lime juice and 10 fresh mint leaves and 37.5ml of simple syrup to the shaker.

Muddle the mint leaves and limes to extract all those fresh flavors.
- Add 50ml Cape Saint Blaize Classic Gin juice and add ice to your cocktail shaker.

Shake your cocktail for about 10 seconds to chill and blend all the ingredients.

Strain your cocktail through a fine strainer in your cocktail glass filled with ice.
